Default Just Starting on a 79/ 20'

I am new to this so I am going to ask some questions to get started.
1) would i be crazy to remove the fron step and make the deck one level?
2)the boat i have has a 47 gallon fuel tank, i would like to upgrade the capacity. what do you think the max i could hold would be?
3)i am considering putting in a livewell in the transom, any ideas of how big of one i could get away with.
4) i am going to install a bracket, as long as it is a floating bracket does it matter the manufacturer?
5) have you ever put in a small freshwater tank?
6) i am thinking about not having a fishbox and using a fish bag when i do fish, thus saving some room in the deck
7)what about the oil resivour for the outboard, and ideas of a place to mount that
thanks in advance for any help you guys can offer. i am really excited about this project. i want to get a good plan together before i start.
