I like the shark gray seperated by the red boot stripe the best...looks nice!

I think it would look great if you ran the boot stripe parallel to the waterline, not up the chine. Our 23' has it following the chine and I can't stand it, it makes the bow look like it sits so low and IMO ruins the lines. I'm just afraid the gel won't come back if I try to change it. Option #2 looks good

I like #1 because it's a little different.
Just FYI on the shark white. I had it on my old boat and it turns green above the water line very quickly. May be a good reason to run the boot top parallel to the waterline if you go with the shark white. Both look good. Shot of my old boat.
